Brazil Cerrado from Don Pablo

I have to admit, I’m not a big fan of South American coffee.I’ve long been tainted by all the Maxwell House and Folgers and other crap coffees coming out of Columbia and Brazil.

Most of them are nothing but caffeinated brown water pretending to be coffee.

Not so with Brazil Cerrado from Don Pablo.

I’ve written about Don Pablo before, even hosted him at my home for a coffee party. If anyone can change my mind about South American coffee, it’s him and his wife.

In his words…

“Don Pablo Brazil Cerrado is a unique coffee that is processed using the semi-washed technique where the fruit of the coffee cherry is left on the bean during the drying process. This technique adds a delicate sweetnessheightened mouthfeel with a well-rounded acidity. This coffee has a medium body, low acidity and is very rich and robust.

The slight caramelization of the natural sugars in the bean give this Medium-Dark coffee a touch of roastiness, while it still retains its natural flavor character, giving it a sweet, pleasant aftertaste.”

All that to say that the coffee is magnificent, and I highly recommend it.
